Sweet potatoes in 5 recipes - Part 1

Are there any sweet potato lovers out there? If so, then you will definitely enjoy this post :-) 1 basic ingredient and 5 different recipes! I have breakfast, lunch, dinner, dessert and snack ideas for you, and every menu item includes sweet potatoes. What is the purpose of this article? To show you how you can create a diverse menu with one basic ingredient and how it can taste great every time.


BREAKFAST - Sweet potato toast

Ingredients:

  • 1 medium sweet potato

  • Hummus

  • Goat cheese

  • Pear

  • Top with walnuts and salad to taste

Preparation time: 15 minutes
Portion: for 4 people
Designation: Vegetarien, 
Gluten-free 

Directions:

  1. Sliced sweet potatoes coated with ghee, bake in the oven for approx. 15 minutes at 150 degrees.

  2. Spread a layer of hummus.

  3. Garnish with slices of goat cheese, pears and top with nuts and salad. So you have a balanced breakfast full of flavor and the necessary nutrients ready in a few minutes. Enjoy!



LUNCH - Mashed sweet potatoes with salmon

Ingredients:

  • 4 Sweet potatoes

  • 4 slices of salmon in BIO quality

  • Brussels sprouts

  • Herbs

  • Ghee - for baking salmon

  • Coconut oil - for roasted Brussels sprouts


Preparation time: 30 minutes
Portion: for 4 people
Designation: Gluten-free


Directions:

  1. Bake salmon on both sides at 180 degrees for about 30 minutes.

  2. Meanwhile, boil the sweet potatoes gently in lightly salted water, cut into cubes like regular potatoes. Mash and add herbs

  3. Brussels sprouts go great with fish. It tastes best steamed for about 5 minutes and then lightly fried in coconut oil with a little bit of salt.



DINNER - Pumpkin-beetroot quiche

Ingredients:

  • 2 medium size sweet potatoes

  • 2 carrots

  • 4 eggs

  • 1/2 of little pumpkin

  • 1 beetroot

  • A handful of spinach

  • Mixture of cheddar and mozzarela


Preparation time: 30 minutes
Portion: for 6 people
Designation: Vegetarien, 
Gluten-free 

Directions:


  1. Spread ghee in an oval shape form. Placed the sweet potatoes cut into rounds at the bottom of the form and pierce them with a fork.

  2. Finely grate all the vegetables and mix with eggs and cheese.

  3. Preheat the oven to 180 degree. Bake for 30 minutes until the quiche is well cooked inside. Enjoy!
