It´s been a long time since I’ve prepared a sweet and light desert, so voilá :- ) Summer season and strawberries are just perfect for it! This time I experimented a bit with millet I was nicely surprised by how delicious it was. Millet is gluten-free cereal, so it is much more digestible and definetely worth a try!
Ingredients:
125 g of Millet - 1/2 volume of standart tea cup
200 ml of yogurt
1 banana
Strawberries
Cinnamon and vanilla
Optional garnish:
Plant-based milk for a softer taste
Coconut chips
Almond yogurt for a vegan version
Preparation time: 10 minutes + millet preparation 30 minutes

When time and circumstances allow, I try to discover and incorporate new ingredients into our menu, and so it was this time with millet. I must say that I was pleasantly surprised by their taste and easy preparation. I will definitely prepare this millet pudding with strawberries more often over the summer because it is possible (as is usual with my sweet recipes :-) to serve as a quick breakfast or snack, as well as a dessert for friends.

Millet
Millet is gluten-free cereal originaly from Asia, but now commonly grown in Europe. This cereal is also suitable as a first meal for a baby so you can prepare millet porridge with fruit or vegetables for your little ones. Millet is rich in fibre, so it improves digestion. Millet also contains essential amino acids, which the body cannot produce on its own. Essential amino acids are then used to build protein and are therefore an excellent source of plant-based protein for vegetarians and vegans.
Strawberries
Strawberries are one of my favourte fruits. They are great source of vitamin C which supports the immune system. They are also contains fibre, potassium, manganese and vitamin B9 (folate). Folate is essential, especially during pregnancy for the proper growth and development of the fetus.

Directions
Cook millet according to the package instructions. I personally leave it soaked in cold water for about 10 minutes before I prepare all the necessary ingredients. Then pour out the water and boil it in new water at ratio of 1 portion of millet to 4 portion of water. 1 portion of millet in this recipe is 125 g (1/2 volume of a standard tea cup).
I add also a little bit of cinnamon and vanilla for a sweeter taste.
Then transfer to a glass dish and allow to cool for 5-10 minutes.
Mash the banana and mix it with the cooked millet. Put the mixture in serving bowls, add sliced strawberries, yogurt and garnish with pieces of coconut and mint leaves. Enjoy!
My tip
Prepare this pudding in advance and store it in the fridge for the next day. This will save you time in the morning. If you have busy day at work, take it with you and enjoy it with afternoon coffee, it will give you energy for the rest of the day.
