Rainbow wrap ready in 10 minutes

Do you want to bring some color and to your meal preparation and only have a few minutes? Try this Rainbow wraps! They are easy, healthy and you will have fun preparing them.

The best part? You can prepare it in advance for next day as a lunch for work or as a snack to your weekend family trip.

Ingredients:

  • 2 Tortillas

  • Hummus - I use beet humous

  • A handful of spinach

  • Carrot

  • Cucumber

  • Pepper

  • Corn

Optional garnish:

  • Feta cheese

  • Sprouts


Preparation time: 10 minutes
Portion: for 2 people
Designation: Vegetarian, to-go

This type of dinner is perfect when you are busy, you don't have many ingredients at home and you can combine what's left from the previous days into it. We usually make scraps before a bigger purchase, so I use up the rest of the ingredients I have in the fridge.

Hummus

Why am I adding hummus to this wrap? Because humus is made from chickpeas, tahini, olive oil and salt and is a great source of plant-based protein, so it is also suitable for vegetarians and vegans.

It enriches the wrap beautifully and is not difficult to prepare at home. But if you don't have time to prepare hummus yourself at home, you can get it at the store today, just pay attention to the composition so that unnecessary additives are not added.


Spinach

You may have already known that this leafy green vegetable is a great source of vitamin K, which is essential for blood clotting. But spinach is also a great source of vitamin A, important for your eyes.


Directions

  1. Take the tortilla and spread your favorite hummus on it. My favorite is beetroot humus, it has a slightly earthy taste and will enrich the wrap with its color.

  2. Then add a handful of spinach, sliced carrots, peppers, cucumber slices and sprinkle with corn. I still have feta cheese in the fridge, so I often add it here, but you can change it according to taste and use halloumi, mozzarella, shredded meat, or just use vegetables if you want a lighter version.

  3. In the end, I always add mungo sprouts for their hazelnut taste and to make it crunchy.

  4. Then I turn the sparrow first on the sides so that the vegetables do not fall out and only then wrap them in paper (I use baking paper).

My tip
