Porridge for a great start to your day

Ingredients:
Oat flakes
1 banana
200 ml of plant-based yogurt
100 ml of plant-based milk
Seasonal fruits
Nuts
Optional garnish:
Cinnamon
Cacao powder
Homemade granola
Fresh mint leaf
Preparation time: 10 minutes

Do you want something sweet but don't like spending time in the kitchen in the morning? Or are worried about getting your children to school and want to have breakfast quickly? Then this type of breakfast is for you! Six ingredients and voila, light and healthy breakfast ready in 10 minutes! You can also prepare it in advance the evening before so it will be ready next day. It's great that you can make this breakfast from apples or pears in the winter and in summer, when there is more fruit variation, you can change it as you wish. You´ll always have a slightly different breakfast, ready in a few minutes.

My most popular version is with raspberries and blueberries, garnished with mint leaves. Did you know that forest fruits are a great source of vitamins C and antioxidants? And what exactly are antioxidants? Forest fruits have antioxydants called Anthocyanin which belongs to flavonoid family. This antioxidants protect our cells from damage caused by so-called free radicals. These substances are produced by our body during chemical reactions to stimul from the external and internal environment, such as inflammation in the body or exposure to UV radiation and cigarette smoke.
Oat flakes
Why use oatmeal to make breakfast? They are a source of carbs so they supply you with energy, but they also contain fiber, it soaks your satiety for a longer period of time, thus regulating blood sugar levels and improving digestion. In addition, oat flakes do not contain gluten.
Directions
Mash the banana, add the oats flakes, plant-based milk and cinnamon and in a small pan heat until the mixture starts to thicken and bubble. Then transfer to a glass dish and allow to cool. I prefer to use almond milk which complements well with banana and give to porridge naturally sweetens.
Let it cool for 5-10 minutes and then add plant based yogurt, my favorite is coconut yogurt and then just garnish with seasonal fruits and nuts.
If you want to make this recipe special or serve it as a dessert, add cocoa powder to a mixture of flakes and milk or sprinkle with dark 90 percent chocolate.

I often make this Porridge with seasonal fruits on Sunday evenings, if I don't catch up during the week. Thus prepared in the refrigerator, it will last for 2 days.
